Zucchini Pizza Casserole

Enjoy Zucchini Pizza Casserole

INGREDIENTS:

  • 1 pound ground chuck

  • 2 pounds zucchini (sliced or shredded)

  • 1 medium onion chopped

  • 1/2 cup chopped green pepper

  • 1 cup sliced mushrooms

  • 2 to 3 oz. pepperoni

  • 1 package provolone cheese slices

  • 2 cups shredded mozzarella cheese

  • 1 tsp garlic powder

  • 1 1/2 tsp Italian seasoning.

  • 1 6 oz. Tomato paste.

  • 2 to 6 oz. water

INSTRUCTIONS:

  1. Preheat your oven to 400 degrees.

  2. In a large skillet, add ground beef and onions.

  3. Once the beef is browned and the onions tender, add seasoning and zucchini.

  4. Blend together. Add the tomato paste and stir in well.

  5. Add small amount of water to blend well.

  6. Cover and cook about 4 minutes.

  7. Spray a 9 x13 casserole dish

  8. Place half mixture in the dish.

  9. Cover with provolone cheese slices. Add the rest of the mixture.

  10. Sprinkle part of your mozzarella cheese.

  11. Add your green pepper. Mushrooms and pepperoni.

  12. Cover with the rest of the shredded mozzarella cheese.

  13. Bake uncovered for 20 minutes.

  14. Remove from oven and let rest for 5 minutes.

  15. Makes 6 to 8 servings
