Keto CHICKEN, BACON, RANCH casserole

This is made by my friend Mandy!


Another family-approved keto casserole!

INGREDIENTS:

  • 6 cooked chicken breasts, diced/cubed/or shredded - cooked and shredded in the instant pot

  • 1 bag fresh broccoli florets (lightly steamed)

  • 10 slices bacon cooked and chopped

  • 2 cups shredded mozzarella

  • 2 cups shredded cheddar

  • 1 cup ranch dressing

INSTRUCTIONS:

  1. Cook chicken

  2. Dice or shred cooked chicken and add to the casserole dish

  3. Slightly steam broccoli, add to the dish

  4. Add half of the chopped bacon, half of the cheeses, and 1 cup ranch (Mix/combine)

  5. Top with remaining cheese and bacon pieces.

  6. Bake at 375 for 30 minutes or until all cheeses are melted and the top is “crispy”.

  7. (PS - any green veggie would work... spinach, green beans, etc. )
