Low Carb Pizza Casserole

INGREDIENTS:

  • 3 lbs. ground chicken (or ground turkey or ground Italian sausage or mixture of the three!)

  • 4 cups shredded Italian blend cheese

  • 1 large jar RAO’s marinara sauce (or no sugar added pasta sauce of choice... look for the lowest carb possible)

  • 1 package mini pepperoni

  • “Toppings” of choice (we love Pepperoncini peppers, and sometimes to green peppers, black olives, onions, mushrooms to make a “supreme”)

INSTRUCTIONS:

  1. Brown all ground meat and cook thoroughly in a skillet.

  2. Mix in casserole dish with sauce, pepperoni, 2 cups of shredded cheese.

  3. Spread evenly.

  4. Top with remaining cheese and the rest of your chosen toppings.

  5. Bake at 375 for 30-45 minutes until top layer of cheese is bubbly!! (We serve with side salad!)
