Keto Spanish Bacon Cauliflower Rice

𝗧đ—ĩđ—ļ𝘀 đ—ļ𝘀 𝗮 đ—ģđ—ļ𝗰𝗲 đ—ē𝗲𝗮𝗹 𝘁đ—ŧ 𝘀đ—ĩ𝗮đ—ŋ𝗲 𝘄đ—ļ𝘁đ—ĩ 𝘆đ—ŧ𝘂đ—ŋ đ—ŗđ—Žđ—ēđ—ļ𝗹𝘆.

īŧŠīŧŽīŧ§īŧ˛īŧĨīŧ¤īŧŠīŧĨīŧŽīŧ´īŧŗīŧš

  • 2 cups Cauliflower Rice, fresh or frozen

  • 1 cup cooked bacon, chopped

  • 2 tbsp Olive Oil

  • 1 cup Salsa, which can be store-bought or homemade

  • 2 tbsp Tomato Paste

  • 1 Clove garlic, finely chopped

  • 1 small-sized onion, finely chopped

  • 1 green bell pepper, chopped

  • 1 red bell pepper, chopped

  • 1/2 tbsp Homemade Taco Seasoning

  • 1/2 tsp Himalayan salt

  • 1/4 tsp Black Pepper

  • 1/2 tsp Ground Cumin

īŧŠīŧŽīŧŗīŧ´īŧ˛īŧĩīŧŖīŧ´īŧŠīŧ¯īŧŽīŧŗīŧš

  1. Cook bacon to crisp, chopped, and set aside

  2. Heat a large skillet to medium-high.

  3. Add the olive oil and toss in garlic and onion, in less than a minute add in the peppers

  4. Toss in cauliflower rice

  5. Cook the rice for about 3-4 minutes.

  6. Add tomato paste, salsa, and taco seasoning.

  7. Sprinkle in salt, pepper, and cumin

  8. Add in bacon

  9. Cook until all the liquid from the salsa is dried and the cauliflower rice is tender. This would be around 8-10 mins
