Keto Spanish Bacon Cauliflower Rice

𝗧𝗵𝗶𝘀 𝗶𝘀 𝗮 𝗺𝘂𝘀𝘁 𝘁𝗿𝘆, 𝗶𝗻𝗱𝗲𝗲𝗱!

𝗧𝗵𝗶𝘀 𝗶𝘀 𝗮 𝗻𝗶𝗰𝗲 𝗺𝗲𝗮𝗹 𝘁𝗼 𝘀𝗵𝗮𝗿𝗲 𝘄𝗶𝘁𝗵 𝘆𝗼𝘂𝗿 𝗳𝗮𝗺𝗶𝗹𝘆.

INGREDIENTS:

  • 2 cups Cauliflower Rice, fresh or frozen

  • 1 cup cooked bacon, chopped

  • 2 tbsp Olive Oil

  • 1 cup Salsa, can be store-bought or homemade

  • 2 tbsp Tomato Paste

  • 1 Clove garlic, finely chopped

  • 1 small sized onion, finely chopped

  • 1 green bell pepper, chopped

  • 1 red bell pepper, chopped

  • 1/2 tbsp Homemade Taco Seasoning

  • 1/2 tsp Himalayan salt

  • 1/4 tsp Black Pepper

  • 1/2 tsp Ground Cumin

INSTRUCTIONS:

  1. Cook bacon to crisp, chopped, set aside

  2. Heat a large skillet to medium-high.

  3. Add the olive oil and toss in garlic and onion, in less than a minute add in the peppers

  4. Toss in cauliflower rice

  5. Cook the rice for about 3-4 minutes.

  6. Add tomato paste, salsa, and taco seasoning.

  7. Sprinkle in salt, pepper, and cumin

  8. Add in bacon

  9. Cook until all the liquid from the salsa is dried and the cauliflower rice is tender. This would be around 8-10 mins
