For the Meatloaf
1.5 pounds ground beef (85% lean)
1/2 cup almond flour
1/4 cup grated Parmesan cheese
1/4 cup heavy cream
2 large eggs
1/4 cup finely chopped onion
1/4 cup finely chopped bell pepper (red or green)
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
For the Topping:
1/4 cup sugar-free ketchup
2 tablespoons mustard (yellow or Dijon)
2 tablespoons powdered sweetener of your choice (we use Monk fruit)

Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground beef, almond flour, Parmesan cheese, heavy cream, eggs, chopped onion, chopped bell pepper, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix until all ingredients are well combined.
Shape the meat mixture into a loaf shape and place it in a greased or parchment-lined baking dish.
In a small bowl, whisk together the sugar-free ketchup, mustard, and powdered sweetener to create the topping.
Spread the ketchup-mustard topping evenly over the meatloaf. Add mozzarella cheese on top
Bake the meatloaf in the preheated oven for about 45-55 minutes or until the internal temperature reaches 160°F (71°C).
Once done, remove the meatloaf from the oven and let it rest for a few minutes before slicing.
