Broccoli Ham Stew

Perfect for this cold weather!

Easy, No Fuss Broccoli Ham Stew for the cold weather

INGREDIENTS:

  • 2 teaspoons olive oil

  • 1 cup Deli meat, cut into strips or cubed

  • 2 cloves garlic, finely chopped

  • 1 cup water

  • 3 tsp xanthan gum to thicken the soup

  • 1 can (10 1/2 oz) condensed beef consommé

  • 1 cup zucchini strips

  • 3 cups Broccoli

  • 1 cup chopped red & green bell pepper

  • 2 Tbsp Ghughes teriyaki sauce

  • Salt & Pepper to taste

INSTRUCTIONS:

  1. Cook garlic and meats in olive oil, medium heat

  2. In a small bowl, dissolve xanthan gum with water until mixed well. Set aside

  3. Add in consomme to meat mixture, heat to boiling, stirring frequently, then add the water mixture with dissolved xanthan gum, add teriyaki sauce

  4. Reduce heat to medium-low stirring occasionally for 3 mins

  5. Add in broccoli, zucchini, and bell pepper

  6. Cook until soup thickened and vegetables are tender
