Bacon Mushroom Quesadilla

Easy Quesadilla recipe for the family!



INGREDIENTS:

  • 1 tsp olive oil

  • ½ cup Bacon

  • ½ cup sliced mushrooms

  • 2 cloves garlic, minced

  • 1-2 cups fresh spinach

  • 3 Eggs

  • ½ cup shredded mozzarella cheese

  • ½ cup shredded parmesan cheese

  • Salt and pepper to taste

  • 2 Large low-carb wrap

  • Parsely (optional for garnish)

  • SF ketchup or salsa for dipping (optional)


INSTRUCTIONS:

  1. Heat up pan and grease with olive oil

  2. Cook in bacon, remove from pan

  3. Add in garlic, then the mushrooms

  4. Cook until mushrooms have softened and caramelized

  5. Add in spinach and cook til wilted

  6. Add in eggs, scrambles with the veggies, seasoned with salt and pepper, and set aside

  7. Place low carb wrap in the skillet and add a layer of both kinds of cheese on half of the wrap

  8. Add in the scramble, bacon, and top with more cheese, then fold the tortilla in half

  9. Cook for 6-8 mins over medium heat, flipping til done

  10. Garnish with fresh parsley and serve with SF ketchup or salsa
