Smothered Chicken

What’s for dinner?

Try out this new chicken recipe

INGREDIENTS:

  • 6 slices bacon

  • 1 (8-ounce) package white or cremini mushrooms, sliced

  • 1 jalapeno, minced

  • 1 1/2 cups shredded Colby Jack or Mexican cheese

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • Salt, pepper & garlic powder (season to your liking)

INSTRUCTIONS:

  1. Dice bacon and cook in a large skillet until crispy.

  2. Remove to a paper towel-lined plate.

  3. Leave 1 tablespoon of bacon grease in the skillet and cook the mushrooms in it until browned.

  4. When mushrooms are almost done, add jalapeno and continue to cook for about 1 minute.

  5. Season with salt and pepper and let cool some.

  6. Preheat oven to 375 degrees.

  7. Heat oven-proof pan over medium-high heat.

  8. Add olive oil and the seasoned chicken breasts. Cook for 5-7 minutes per side

  9. Top with bacon, mushroom & jalapeño mixture with cheese on top

  10. Place pan in oven for 15 to 20 minutes
