Low Carb Peanut Butter Buckeyes
Oh, these are my most favorite!
2 cups peanut butter
10 oz. cream cheese
1/8- 1/4 cup monk fruit ( to taste )
1 teaspoon vanilla
1 cup 90% cocoa dark chocolate
1/2 teaspoon organic coconut oil
2 teaspoons Monkfruit
Mix 2 cups peanut butter, 10 oz. cream cheese, 1/8- 1/4 cup monk fruit ( to taste ), and 1 teaspoon vanilla
Roll into balls and pop in the freezer.
Melt 1 cup 90% cocoa dark chocolate with 1/2 teaspoon organic coconut oil, 2 teaspoons Monkfruit, and mix together.
Dip peanut butter balls in chocolate and freeze or refrigerate.
