Keto or Low Carb Pumpkin Pie Mug Cake


INGREDIENTS:

  • 2 Tablespoons coconut flour

  • 2 Tablespoons almond flour

  • 2 Tablespoons Monk Fruit

  • 1 Tablespoon melted butter

  • 1 Tablespoon heavy cream or unsweetened almond milk

  • 1/2 teaspoon baking powder

  • 1 egg

  • 2 Tablespoons pumpkin purée

  • 1/2 teaspoon pumpkin spice

  • 1/2 teaspoon vanilla


INSTRUCTIONS:

  1. Mix all the ingredients

  2. Bake at 350 for 15 to 20 mins

  3. Or you can microwave for 60 to 90 seconds in a microwavable bowl

  4. Add frosting

Cream Cheese Frosting:

  • 2 oz. Cream Cheese

  • 2 Tablespoons Monk fruit and a splash of heavy cream
