For the cold winter seasons coming!
INGREDIENTS:
1/2 sweet onion chopped small
2 Tbsp. butter
One bag chopped cauliflower florets
3 cups chicken stock
1 tsp garlic powder
1 tsp Himalayan salt
INSTRUCTIONS:
Sauté the onions in the butter
Add one bag chopped cauliflower florets
Add 3 cups chicken stock, 1 tsp garlic powder and 1 tsp Himalayan salt
Cook on High Pressure for 5 minutes then release.
Once done, use an immersion blender or add to a food processor (make sure the cauliflower is super soft) and blend till smooth
Add 4 oz. cubed cream cheese and 1 cup shredded cheddar and start to melt.
Return cauliflower and stock to instant pot and allow the cheese to melt completely.
Add 1/2 cup heavy cream.
Top with bacon, onion, cheese, sour cream or anything you want.
That easy!
