Keto Low carb “Loaded Cauliflower” Soup

For the cold winter seasons coming!


INGREDIENTS:

  • 1/2 sweet onion chopped small

  • 2 Tbsp. butter

  • One bag chopped cauliflower florets

  • 3 cups chicken stock

  • 1 tsp garlic powder

  • 1 tsp Himalayan salt

INSTRUCTIONS:

  1. Sauté the onions in the butter

  2. Add one bag chopped cauliflower florets

  3. Add 3 cups chicken stock, 1 tsp garlic powder and 1 tsp Himalayan salt

  4. Cook on High Pressure for 5 minutes then release.

  5. Once done, use an immersion blender or add to a food processor (make sure the cauliflower is super soft) and blend till smooth

  6. Add 4 oz. cubed cream cheese and 1 cup shredded cheddar and start to melt.

  7. Return cauliflower and stock to instant pot and allow the cheese to melt completely.

  8. Add 1/2 cup heavy cream.

  9. Top with bacon, onion, cheese, sour cream or anything you want.

That easy!
