Citrus Pulled Pork

INGREDIENTS:

  1. 3-4 lbs. pork shoulder or pork butt

  2. 1 tablespoon olive oil

  3. Salt and pepper to taste

  4. 1 teaspoon garlic powder

  5. 1 teaspoon onion powder

  6. 1 teaspoon smoked paprika

  7. 1 teaspoon cumin

  8. 1/2 teaspoon cayenne pepper (adjust to taste)

  9. Zest of 1 lime

  10. Zest of 1 orange

  11. Juice of 1 lime

  12. Juice of 1 orange

  13. 1/2 cup chicken broth


INSTRUCTIONS


Preheat the oven

  • Preheat your oven to 325°F (163°C).

Prepare the pork

  • Pat the pork dry with paper towels. Season it generously with salt, pepper, garlic powder, onion powder, smoked paprika, cumin, and cayenne pepper.

Sear the pork

  • In an oven-safe Dutch oven or skillet, heat olive oil over medium-high heat.

  • Sear the pork on all sides until golden brown.

  • Add citrus zest and juice: In a small bowl, combine the lime zest, orange zest, lime juice, and orange juice.

  • Pour this mixture over the seared pork.

Braise the pork

  • Add chicken broth to the Dutch oven.

  • Cover with a lid and transfer it to the preheated oven.

  • Braise for 3-4 hours, or until the pork is tender and easily pulls apart with a fork.

Shred the pork

  • Once the pork is cooked, use two forks to shred it inside the Dutch oven.

  • The meat should absorb the flavorful juices.

Serve

  • Serve the pulled pork on a bed of lettuce, cauliflower rice, or with keto-friendly wraps.

  • You can also add your favorite keto-friendly barbecue sauce if desired.
