Chicken Zoodle Soup

4 large zucchini

2 c shredded cooked chicken

2 tbsp olive oil

6 c chicken stock

½ sweet onion diced (optional)

3 stalks of diced celery

1 orange or red bell pepper diced

1 clove garlic minced

½ tsp dried oregano

½ tsp dried basil

1 tsp ground pepper

1 tsp salt


*Heat oil in a large pot over medium heat. *Mix the celery, pepper, garlic, and onion * into the pan and cook. Stir often until veggies soften up. *Add the chicken and chicken stock into the pot along with the oregano, salt, basil and pepper. *Add your zucchini into the pot after you spiralize it. *After the pot comes to a boil you can then reduce heat and allow to simmer.

*Continue to stir occasionally, for 8-12 minutes or until the zucchini noodles are as soft as you’d like. *Add additional seasoning for taste if needed.
