INGREDIENTS:

  1. 1 medium-sized spaghetti squash

  2. 2 cups cooked turkey, shredded

  3. 1 cup heavy cream

  4. 1 cup grated Parmesan cheese

  5. 3-4 tablespoons butter

  6. 3-4 fresh sage leaves, finely chopped

  7. 2 cloves garlic, minced

  8. Salt and pepper to taste

  9. Optional: Grated nutmeg for extra flavor


INSTRUCTIONS


Prepare the Spaghetti Squash:

Preheat your oven to 400°F (200°C).

Cut the spaghetti squash in half lengthwise and scoop out the seeds.

Place the squash halves, cut side down, on a baking sheet.

Roast in the preheated oven for about 40-45 minutes or until the squash is tender.


Scrape the Squash:

Allow the roasted spaghetti squash to cool slightly.

Using a fork, scrape the flesh of the squash to create "spaghetti" strands. Place the strands in a bowl and set aside.


Prepare the Alfredo Sauce:

In a saucepan over medium heat, melt the butter.

Add the minced garlic and chopped sage, sautéing until fragrant.

Pour in the heavy cream, stirring continuously until it starts to simmer.


Add Parmesan Cheese:

Gradually add the grated Parmesan cheese to the sauce, stirring constantly to ensure it melts smoothly.


Combine with Turkey and Spaghetti Squash:

Stir in the shredded cooked turkey into the Alfredo sauce, ensuring it is well coated.

Gently fold in the spaghetti squash strands until everything is evenly combined.


Season:

Season the mixture with salt and pepper to taste. If desired, add a pinch of grated nutmeg for extra depth of flavor.


Simmer:

Allow the entire mixture to simmer for a few minutes, allowing the flavors to meld together. Be careful not to boil the sauce.
