  • 1 cup heavy cream

  • 1/2 cup smooth peanut butter (sugar-free)

  • 1/4 cup powdered erythritol or sweetener of choice

  • 1 teaspoon vanilla extract

  • Optional toppings: chopped peanuts, dark chocolate chips (Lily's), or whipped cream


  1. In a mixing bowl, whip the heavy cream until soft peaks form. Set aside.

  2. In another bowl, combine the peanut butter, powdered erythritol (or sweetener), and vanilla extract. Mix well until smooth and well combined.

  3. Gently fold the whipped cream into the peanut butter mixture until fully incorporated. Be careful not to overmix.

  4. Divide the mousse mixture into serving glasses or bowls.

  5. Optional: Top with chopped peanuts, dark chocolate shavings, or a dollop of whipped cream for added texture and flavor.

  6. Refrigerate for at least 1-2 hours to allow the mousse to set and chill.
