Low Carb Fried Sweet and Sour Pork

Something new to try!!! Sooo good!


INGREDIENTS:

Low Carb Fried Sweet and Sour Pork

1 lb pork

1 small size onion quartered

2 bell pepper red & green (strips)

3 to 4 cloves garlic minced

½ cup Lakanto Golden Monk Fruit Sweetener - or any sweetener of your choice

1 cup no sugar added ketchup - we prefer G hughes

¼ cup apple cider vinegar

1 tbsp coconut aminos

¼ tsp xanthan gum

2 tbsp almond flour

1 tbsp salt

1 tsp sesame oil

Black pepper to taste


INSTRUCTIONS:


Fried Pork

Cut pork into small serving pieces. Boil in 1 and 1/2 cup water with a little salt. When tender, drain.Set aside broth to be used later.

Sprinkle flour on pork. Fry until golden brown. Set aside

Sweet and Sour sauce

Sauté minced garlic until brown.

Add altogether onion and pepper strips. Stir. After 3 minutes or until half-cooked, add ketchup, apple cider vinegar, sweetener, and broth.

Season with coconut aminos, salt and pepper. Do not overcook the vegetables. Thicken with xanthan gum and add in sesame oil. When it boils pour over fried pork. Let it boil for 3-5 more mins.
