Who loves breakfast bowls?
INGREDIENTS:
1 lb ground sausage (preferably sugar-free and low-carb)
4 cups fresh spinach leaves
4 large eggs
1/4 cup heavy cream
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper to taste
Optional toppings: Bacon, Sunny side up egg, sliced avocado, chopped green onions, hot sauce, etc.
INSTRUCTIONS:
Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
Add ground sausage to the skillet and cook, breaking it up with a spoon, until browned and cooked through.
Once the sausage is cooked, add the fresh spinach leaves to the skillet.
Stir and cook until the spinach wilts, about 2-3 minutes.
In a separate small bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese.
Season with salt and pepper.
Push the sausage and spinach mixture to one side of the skillet, creating a space for the eggs.
Pour the egg mixture into the empty space in the skillet.
Let it cook undisturbed for a minute or two until the edges start to set.
Gently stir the egg mixture, incorporating it with the sausage and spinach.
Continue cooking and stirring until the eggs are cooked to your desired consistency.
Remove the skillet from heat and divide the creamy ground sausage spinach breakfast mixture into individual serving bowls.
Optional toppings: Bacon, Sunny side up egg, sliced avocado, chopped green
