2 small chicken breast
½ cup broccoli*, chopped
¼ cup shredded cheddar cheese
1-ounce cream cheese softened
1 ounce shredded, mozzarella cheese
1 teaspoon Cajun seasoning
1 egg beaten
½ cup pork rinds
Preheat the oven to 400 degrees F
For the stuffing
In a small bowl combine the broccoli, cheddar cheese, mozzarella, and softened cream cheese, and set aside
How to cut a chicken for stuffing
For each chicken, place one hand on top of the chicken to keep it steady. Insert a sharp knife in the middle of the thickest part
Make a slit about 5cm long.
Run the knife into the breast until it's three-quarters of the way through.
Spread the broccoli cheese mixture on one side of the chicken and roll it over, you can secure it with a toothpick.
How to prepare the coat
Beat egg, add Cajun seasoning
Dip the chicken in the egg wash
and then finally coat it with crushed pork rinds
Place in a greased baking dish. Bake 25-30 minutes until the chicken is cooked through.
