Coated Broccoli Cheddar Stuffed Chicken

A new chicken recipe you must try


  • 2 small chicken breast

  • ½ cup broccoli*, chopped

  • ¼ cup shredded cheddar cheese

  • 1-ounce cream cheese softened

  • 1 ounce shredded, mozzarella cheese

  • 1 teaspoon Cajun seasoning

  • 1 egg beaten

  • ½ cup pork rinds


Preheat the oven to 400 degrees F

For the stuffing

  1. In a small bowl combine the broccoli, cheddar cheese, mozzarella, and softened cream cheese, and set aside

How to cut a chicken for stuffing

  1. For each chicken, place one hand on top of the chicken to keep it steady. Insert a sharp knife in the middle of the thickest part

  2. Make a slit about 5cm long.

  3. Run the knife into the breast until it's three-quarters of the way through.

  4. Spread the broccoli cheese mixture on one side of the chicken and roll it over, you can secure it with a toothpick.

How to prepare the coat

  1. Beat egg, add Cajun seasoning

  2. Dip the chicken in the egg wash

  3. and then finally coat it with crushed pork rinds

  4. Place in a greased baking dish. Bake 25-30 minutes until the chicken is cooked through.
