SHEPHERD’S PIE RECIPE - CAULIFLOWER TOPPING

INGREDIENTS:


Ground Beef Mix

  • 1 cup crushed tomatoes

  • 1 small zucchini diced

  • 2 cloves garlic minced

  • Salt and pepper

  • 1 lb. ground beef

  • 1 tbsp. olive oil

Cauliflower Topping

  • 1 small cauliflower cut into florets

  • 1/2 cup shredded cheese

  • Salt and pepper

  • 1/2 cup heavy cream

  • 2 tbsp. butter

INSTRUCTIONS: Shepherd's Pie

  1. Heat the oil in a large saucepan.  Add the garlic and sauté on medium heat until it softens.

  2. Add the ground beef and cook, stirring until it is browned and cooked through.

  3. Stir in the Zucchini's and Tomatoes . Turn down the heat and let it simmer uncovered for 10 minutes.

Cauliflower Topping

  1. Add cauliflower to boiling water. 

  2. Boil the cauliflower for about about 8-10 minutes

  3. Drain the cauliflower, allowing all steam to escape, dry cauliflower will help make a creamier mash.

  4. Transfer the drained cauliflower to a food processor.  Add the shredded cheese, heavy cream, Salt and pepper, and butter. The goal is to get it smooth.

To Assemble

  1. Place the ground beef mixture in the bottom of a large casserole dish.

  2. Top with the mixed cauliflower.

  3. Bake at 350F for 20-25 minutes and until bubbly and the topping is browned
