Low Carb Strawberry Cobbler
A perfect dessert for everybody!
2 cups fresh strawberries (you can use frozen, thawed, and drained)
1 cup Sweetener (we use Monkfruit)
1/2 cup unsalted butter, softened
1 cup almond flour
1 1/2 tsp vanilla
a pinch of salt
Optional: heavy whipping cream, sweetened for toppings
Cut strawberries in half, then mix strawberries with 1/2 cup of sweetener in a bowl, set aside
In a separate bowl, mix butter with the remaining 1/2 cup of sweetener, beat with a fork
Add in eggs, beat until curdled
Add in almond flour and vanilla, continuously beating until everything is well incorporated
Pour/dollop the mixture into the strawberries
Bake at 375F for about 30-40 mins or so until the topping is golden brown (it should be quite brown for the best flavor).
Let stand a few minutes to cool slightly, then serve warm topped with whipped cream.
