Keto Cowboy Cookies

A new recipe for you!


We love Cookies!

INGREDIENTS:

  • 1.5 sticks softened butter

  • 1/2cup plus 2 tablespoons brown sugar substitute - Swerve

  • 1/2cup plus 2 tablespoons granular sugar substitute - we like Monk Fruit

  • 2 eggs

  • 1.5 teaspoon vanilla extract

  • 2 cups almond flour

  • 1.5 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup unsweetened coconut flakes

  • 1 cup chopped pecans

  • 2/3 cup chocolate chips

INSTRUCTIONS:

  1. Cream together 1.5 sticks softened butter, 1/2 cup plus 2 tablespoons brown sugar (substitute Swerve) 1/2 cup plus 2 tablespoons granular sugar (substitute Monk Fruit) until fluffy about 2 minutes

  2. mix in 2 eggs, 1.5 teaspoon vanilla extract, mix.

  3. Then add in 2 cups almond flour , 1.5 teaspoons baking powder , 1 teaspoon baking soda, 1/2 teaspoon salt, until combined

  4. Then stir in 1 cup unsweetened coconut flakes, 1 cup chopped pecans, 2/3 cup chocolate chips

  5. Bake 325° for 15 to 20 minutes

Make sure you have your over racks set to the middle racks, 12 (2) inch balls on each parchment lined cookie sheet make sure to switch rotate pans halfway through cooking to insure even cooking

OMG! neither my husband or I care for chocolate chip cookies. These are not those. THEY ARE YUMMY! They are soooo good. Perhaps addictive even. Just one comment: the recipe makes 4 dozen. I wasn’t sure so doubled it and got 8 dozen. Now that’s not a bad thing cause they are going fast.
