From my friend Mandy!
Makes LARGE batch, please adjust the recipe accordingly if you prefer not to make as much.
1 cup butter
2 cups Peanut Butter or other nut butter
1 T vanilla
2 T unsweetened cocoa powder
1/2 cup cold press coffee or regular coffee chilled
4 cups almond flour
1 cup Swerve Brown Sugar
2 cups unsweetened coconut flakes
1 cup SF chocolate chips
Melt butter and PB, mix in flour, coconut flakes, cocoa, sugar, coffee, vanilla until well mixed.
Lastly, mix in chocolate chips.
Scoop onto cookie tray, then refrigerate or freeze!
