A delicious dessert!
2 ½ cups of Unsweetened Desiccated Coconut
1 ½ cups of Coconut Milk, full fat
½ cup of Erythritol
⅓ cup of Coconut Flour
2 large Eggs
1 tablespoon butter melted
1 teaspoon of Vanilla
a pinch of salt
Preheat oven to 175C/350F.
Prepare a large cookie sheet by lining with parchment paper.
Add all ingredients to a large mixing bowl. Mix well into a thick batter.
Use a small cookie scoop to scoop the mixture onto your prepared cookie sheet.
Bake for 15-20 minutes, until lightly browned.
Leave to cool on the tray.
Enjoy your cooled cookies or store in an airtight container for later.
