Keto Egg Roll in a Bowl (15-Minute One-Pan Dinner)

If you are craving takeout vibes but you want to keep it simple (and not blow your grocery budget), this Keto Egg Roll in a Bowl is your new best friend. One pan, 15-ish minutes, and it tastes like the inside of an egg roll without the wrapper drama.
Ingredients
1 lb ground pork (or ground turkey/beef)
1 Tbsp avocado oil (or olive oil)
3–4 cups coleslaw mix (or shredded cabbage)
1/2 cup shredded carrots (optional if not already in mix)
3 cloves garlic, minced
1 Tbsp fresh ginger, minced (or 1 tsp ground ginger)
3 Tbsp coconut aminos (or tamari/soy sauce)
1 tsp toasted sesame oil
1–2 Tbsp rice vinegar (optional but brightens it up)
Salt + pepper to taste
Toppings: green onions, sesame seeds, sriracha or chili flakes
Instructions
Heat a large skillet over medium-high heat. Add oil and brown the ground meat, breaking it up as it cooks.
Add garlic and ginger and cook 30 seconds (just until fragrant).
Stir in coleslaw mix (and carrots if needed). Cook 4–6 minutes until cabbage softens but still has a little bite.
Add coconut aminos, sesame oil, and rice vinegar (if using). Stir well and cook 1–2 more minutes.
Taste and adjust: a pinch of salt, more aminos, or a little heat if you like it spicy.
