Cheesy Low Carb Tater Tots
*3 c Cauliflower rice
*½ c parmesan (have a little extra on hand if you would like for topping)
*2 tsp chopped chives
*½ c almond meal
*½ tsp garlic powder (or additional seasonings for your taste)
*¼ c mozzarella cheese
*Optional: ¼ c diced onion (I'm not a fan of onion, but if you like it feel free to add)
*Preheat the oven to 375°F.
*Combine the cauliflower rice, egg, chives, parmesan, mozzarella, and garlic powder, almond meal, and * onion. Feel free to add in salt/pepper for the seasoning of your choose and then stir it all up!
*After mixing it all up, you can begin to form mixture into tots and place on a baking sheet. I would line the baking sheet with parchment paper.
*You can then being to space out the tots and if you kept a little extra parmesan from your ingredients feel free to add a little extra on top.
*Bake for about 18-20 minutes. Rotate the tots about half way through cooking. Once they are golden brown you can take them out and Enjoy!
