If you need a cozy, “everybody will eat it” dinner that won’t blow your carbs, this one’s for you. This creamy taco soup is the kind of meal you can make on a busy weeknight… and still feel like you’re winning.
I love recipes like this because you can keep it simple, or dress it up with toppings. Either way: warm belly, happy people.

Ingredients
1 lb ground beef (or ground turkey)
1 small onion, diced
2 cloves garlic, minced
2 Tbsp taco seasoning (check carbs; or DIY)
1 can (10 oz) Rotel-style diced tomatoes with green chiles
2 cups beef broth (or chicken broth)
4 oz cream cheese, cubed
1 cup shredded cheddar cheese
1 cup cauliflower rice (optional, for extra bulk)
Salt + pepper, to taste
How to make it
Brown the meat in a large pot over medium heat. Add onion and cook 3–4 minutes. Add garlic and cook 30 seconds.
Stir in taco seasoning, tomatoes, and broth. Bring to a gentle simmer.
Add cream cheese. Stir until melted and creamy.
Stir in cheddar until smooth. If using cauliflower rice, add it now and simmer 5 minutes.
Taste and season with salt and pepper. Serve hot.
