Keto Friendly Cinnamon Rolls

1 1/2 c shredded mozzarella cheese
1 egg, beaten
2 oz cream cheese
1 tbsp Lakanto monkfruit sweetener
1 1/2 tsp baking powder
1/8 tsp xanthan gum
3/4 c almond flour
4 oz cream cheese, softened
2 tbsp heavy whipping cream
2 tbsp butter, softened
1/2 tsp vanilla extract
1/4 c powdered Lakanto monkfruit sweetener
4 tbsp butter, melted
1 1/2 tsp cinnamon
2 tbsp Lakanto golden (regular if that's all you have available) monkfruit sweetener
*Preheat oven at 350 degrees F.
*Combine almond flour, sweetener, xanthan gum, baking powder and beaten egg. Mix well and set aside.
*Add mozzarella cheese and cream cheese in small bowl and microwave for 60-90 seconds. Stirring every 30 seconds.Combine cheese mixture with the almond flour mixture and knead with your hands, make sure to get it well combined (Don't burn your hands).
*Refrigerate dough for 10-12 minutes. Separate dough into 6 equal chunks before you start to prepare the filling.
*Combine melted butter , cinnamon, and sweetener in a small bowl and mix it all well.
*Lightly grease 6 muffin tins with butter mixture to avoid rolls sticking.
*Roll each dough ball out into a log that is about 8 inches long and 1/2-1 inch thick.Brush each one with butter mixture as well. Giving each one a nice coating.
*Roll each log up and place into muffin tins.
*Bake for 17-20 minutes and let cool for about 5 minutes.
*Mix all ingredients in a medium bowl and beat with hand beater.
* Add the frosting to the rolls while they are warm
