This is a dairy free recipe. You can always add cheese or other ingredients you love. It’s also a family friendly recipe!
Makes 9 servings
1 tablespoon Coconut oil 1/4 cup chopped onions 1 teaspoon pink Himalayan sea salt 1 cup chopped mushrooms 1/4 cup diced red bell pepper 2 pounds ground pork 1 cup chopped black olives 1 egg 1 teaspoon basil 1 teaspoon oregano 1 teaspoon garlic powder 1 teaspoon red pepper flakes (optional)
Serve with 2 cups red sauce
Preheat the oven to 350 and cover a rimmed baking sheet with foil or a silicone mat.
Heat the oil in a skillet and sautee the onions, and salt. Add the mushrooms and bell peppers. Cook until onions are translucent and mushrooms are soft. Let the mixture cool.
Combined the pork, egg, olives and seasonings in a bowl. Add the onion mixture once it cools and incorporate all the ingredients together.
Make into 36 meatballs and place on the baking sheet to bake. Bake for 30 minutes.
Remove from the oven and serve with red sauce. Enjoy!
