What’s for dinner?!? 😍🥣
1 tbsp. butter
1/2 small onion chopped
1 clove garlic minced
1 lb. ground beef
4 small slices of bacon
1/4 cup chopped tomatoes
1 tbsp. marinara sauce (we use Rao's)
1 tsp Dijon mustard
3/4 cups beef stock
1/4 cup cream cheese
3/4 cup shredded cheddar or Monterey jack cheese
2 tbsp. chopped parsley
1/4 cup heavy cream
Salt and pepper to taste
Add the butter to a soup pan.
Toss in onion and garlic - cook for 2-3 mins
Add the ground beef and bacon, cook until golden brown (set aside 1 slice of bacon, chopped for garnish)
Add the chopped tomatoes, marinara sauce, dijon mustard, beef stock, salt and pepper and bring to the boil.
Simmer in low/medium heat until thickened - around 15mins.
Add the cream cheese, cheddar (leave a tablespoonful for garnish and chopped parsley.
Mix well until the cheese melts. Pour the heavy cream, simmer for around 2-3 mins
Season to taste
Put into bowls and garnish with bacon, cheddar cheese, and parsley. Serve while hot!
